THOUGHTS + DOUGHNUTS

With everything going on with COVID-19 this time has forced us to slow down a little, spend more time with family, reduce consumerism, and get back to basics.  I've used this time to work from home, homeschool, and bake more often.  Baking is something that I enjoy when I have the time and space to create in the kitchen.  It isn't something I feel can be rushed or pushed - with life being so busy, I have taken for granted those fun moments in the kitchen baking alone or with family.  Enjoying the fruits of my labor when family raves about my creations. This past week, I set out to try something new to me, doughnuts!  This is one thing I have never attempted before - but I think the end result was lovely!  I would encourage you to try something new this week.  It doesn't have to be doughnuts, it could be an adventure you were looking to take, flowers that should be planted, or a friend that could use a call.  You might just find something extraordinary in the ordinary.  Find my recipe for blueberry doughnuts below.  Not only are they delicious, but they are also gluten-free, dairy-free, and soy-free - that's a win in my book.

Ingredients (Doughnut):
2 1/4 cup GF Flour (I used Bob's Red Mill 1:1 Ratio Baking Flour)
1/2  cup sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
4 tablespoons melted coconut oil
1/2 coconut milk
1 egg
2 teaspoons vanilla extract
1 1/2 cup fresh blueberries
1/2 bottle of oil for frying (I used canola)


Ingredients (Glaze):
1 cup powdered sugar
2 teaspoons water
dash of vanilla extract

Directions:
1.  Combine dry ingredients in a bowl and set aside.
2.  In a mixing bowl, add oil and sugar to combine.
3.  Add in egg and combine with sugar and oil, add in remaining wet ingredients.
4.  Add half of the dry mixture into the wet mixture and combine, followed by the other half.
5.  Add in fresh blueberries to combine - some will smash, that is okay!
6.  Roll out onto a clean floured surface and arrange in desired shapes (I did a few traditional-looking doughnuts and a few doughnut holes.)
7.  Heat oil in the fryer and lower doughnuts in 2-3 at a time with spider strainer., frying 1-2 minutes on each side.
8.  While frying, prepare the glaze by combining all ingredients - adding more powdered sugar or water until you achieve the desired consistency - I wanted mine to be very thin to reduce the amount of sugar, since the doughnuts were already very sweet.
9.  Dip the doughnuts into the glaze and place on the drying rack until cooled, and enjoy!
